One of the major factors of Halutza’s success comes from the product’s exceptionally low acidity levels
(less than 0.5%). Halutza olives are carefully selected, picked and immediately processed at their mill which is conveniently located at the orchard. The key to low acidity is on-site processing. It preserves the olives freshness and cuts the time that picked olives sit in transport, thus lowering the amount of acid produced.
